Will messages go out to records that already existed before I connected the table?

No. Only genuinely new records trigger a send – a row added with the “+” button, or one that arrives through a CSV import or sync, both count. Editing an old, pre-existing blank row does not trigger anything, because Airtable’s record-creation time doesn’t change when you edit a cell.
